Cocktail Of The Day- because it’s always cocktail hour somewhere in the world. When warm weather arrives, there are few cocktails that hit the spot like a Piña Colada. I know some will scoff at this blended monstrosity but I love them. I love them with as much fervor and passion as I can muster on these delightfully balmy Vancouver days. So put your judging aside, get your tiki umbrellas out and prepare to crush a colada.
2 oz light rum
2 oz coconut cream (such as Coco Lopez)
2 oz pineapple juice
1/2 cup crushed ice
Blend all ingredients and serve in a chilled collins glass. Garnish with a slice of pineapple and a cherry (and all the umbrellas and swizzle sticks you can find). Cheers!
